1 tablespoon oil
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
2 cloves of garlic, minced
4 cups chicken broth
1 cup diced cooked chicken breast
1 cup chopped tomatoes
1 cup green beans, trimmed and chopped
1 teaspoon dried thyme
Salt and pepper to taste
- Heat oil in a large pot over medium heat. Add onions, carrots, and celery, and sauté until softened.
- Add minced garlic and cook for another minute.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add diced chicken breast, tomatoes, green beans, dried thyme, salt, and pepper. Simmer for an additional 10 minutes.
- Adjust seasoning if needed. Serve hot.
