Sweet Potato and Black Bean Burrito Bowl

Ingredients

For the Lime Brown Rice:

  • 2 cups cooked brown rice
  • 1 1/2 tbsp. freshly squeezed lime juice
  • 2 tbsp. fresh coriander, chopped
  • 1/2 tsp. sea salt

 

For the Sweet Potatoes:

  • 2 sweet potatoes, diced
  • 1 tbsp. olive oil
  • 1 tsp. paprika
  • 1 tsp. chili powder
  • 1/2 tsp. sea salt
  • 1/4 tsp. ground black pepper

 

For the Bowl:

  • ½ cup. black beans, rinsed and drained
  • 1 avocado, diced
  • 1 jalapeno, sliced

Method

  1. To make the rice, combine the ingredients in a large mixing bowl, then set aside.
  2. To roast the sweet potatoes, toss the sweet potatoes with olive oil and seasonings. Place on baking sheet and roast in preheated 425 degree F oven for 15-20 minutes, or until crispy and tender.
  3. To assemble the bowl, start with a base of the lime rice, followed by the roasted sweet potatoes, black beans, coriander, sliced avocado. Top with sliced jalapeño and serve.
