Ingredients
For the Lime Brown Rice:
- 2 cups cooked brown rice
- 1 1/2 tbsp. freshly squeezed lime juice
- 2 tbsp. fresh coriander, chopped
- 1/2 tsp. sea salt
For the Sweet Potatoes:
- 2 sweet potatoes, diced
- 1 tbsp. olive oil
- 1 tsp. paprika
- 1 tsp. chili powder
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
For the Bowl:
- ½ cup. black beans, rinsed and drained
- 1 avocado, diced
- 1 jalapeno, sliced
Method
- To make the rice, combine the ingredients in a large mixing bowl, then set aside.
- To roast the sweet potatoes, toss the sweet potatoes with olive oil and seasonings. Place on baking sheet and roast in preheated 425 degree F oven for 15-20 minutes, or until crispy and tender.
- To assemble the bowl, start with a base of the lime rice, followed by the roasted sweet potatoes, black beans, coriander, sliced avocado. Top with sliced jalapeño and serve.
